Bob & Rachel aim to make put Texas Cheese on the Map
We are Otto’s Cheese Shop, the biggest little Cheese Shop in New Braunfels Texas, and we have big plans for the future of cheese in Texas. We like to think that every cheese has a story and we’re passionate about sharing those stories with those who visit our shop, and we’re always excited to learn about new cheeses and the amazing makers behind them. Sharing the story of how cheeses are made and the history behind them is a fun way to explore our food history…and Texas cheeses happen to taste “grate”! It’s important to us that we keep these stories alive and celebrate the spirit that goes into Texas cheese making.
We're featuring Texas cheeses and their makers in a way that showcases the amazing products made right here in the Lone Star State. We want to share the traditions and stories of Texas cheesemakers and discover how they developed their own love of cheese in a way that inspires people to seek out Texas cheeses. We want to create a collaborative community of makers and enthusiasts so that the diverse cheese offerings found in Texas may be properly celebrated.
The Texas Cheese Travel Book will focus on the artisan cheese makers who call Texas home. Each chapter will feature the story of one maker as we explore who they are, what makes their products and processes unique, and the traditions they hold dear. The book will include a tour along the Texas Cheese Trail. From major cities to the grassland prairies, through the hill country, and down to the gulf coastal plains, we will visit amazing makers and taste “grate” cheese along the way.
Texans are proud of their state and rightfully so. The areas our featured cheese makers call home are vastly different, but each is beautiful and tells its own unique story. And there is no better way to capture the magic of cheese making or to tell the stories behind the makers than through the magic of film. In the documentary, Rachel and Bob hit the Texas Cheese Trail to visit each of the makers, see the farmsteads, mingle with the animals, and learn about their unique cheesemaking process. The passion and character of each cheesemaker are what make this a journey like no other. Join us as we capture a bit of the pioneer spirit and set off on a truly Texan adventure.
