Rachel
Rachel is the co-owner with her husband at Otto's Cheese Shop. She is a proud Texan, Texas State Bobcat, and mom of two. She has been passionately serving cheese to New Braunfels since Otto's opened in May of 2021. Rachel wears many hats as part of owning a small business from making cheese boards to finding and curating the items in the shop, organizing classes to creating content for social media. Rachel loves all cheeses but her go-to is Prairie Breeze.

Bob
Bob is co-owner with his wife at Otto's Cheese Shop. He is a proud Texan, Texas Aggie, and dad of two. He has been cutting the cheese for New Braunfels since Otto's opened in May of 2021. Bob not only cuts the cheese, he cuts the meats we pack as well, willingly speaks to crowds, and is always down to party with a good cheese board!

Bel
Bel joined the Otto's team in September of 2022 as one of the shop Cheesemongers. She has been a certified curd nerd since 2015, after she tried Humboldt Fog for the first time! She is mother to two beautiful children, both cheese obsessed as well. Bel is aspiring to become a Certified Cheese Professional through the American Cheese Society, a great title for any cheese professional. Her passion shines from behind the cheese counter, and she truly believes joy can be found through good food and good wine!
